Ingredients for making the scrumptious dates barfi

  • 500 gms of seedless dates
  • 100 to 200 gms poppy seeds ( khus khus)
  • 1/2 cup chopped cashew nuts
  • 1/2 cup chopped almonds
  • 1/2 cup chopped pistachios
  • 2 tablespoons ghee
  • 1/2 tablespoon Elaichi powder (cardamom powder)
  • 1 to 2 tablespoon  coconut powder (optional)

Method for preparing sugar-free dates barfi


Khajur and Dry Fruit Burfi

  • As per the desired quantity of the barfi to make, take 500 gms or 1 kg of seedless dates. Make sure the quantity of the dates to be used is at room temperature. Cut the seedless dates finely so that it becomes easier to grind in the mixer.
  • Transfer the seedless and chopped dates into a mixer jar and don't try to add water in the entire process of making the dessert recipe. Run the mixer taking breaks in the middle because grinding the khajoor in the mixer is a realm difficult task! Don't harm your mixer in the process!
  • Heat up the pan in medium flame and take the 200 gms poppy seeds (khus khus) and cook the poppy seeds for 1 to 2 mins till it turns golden brown. Don't do too much just a matter of 1 to 2 mins and transfer it to a plate.
  • Add 1 tablespoon ghee and add all the dry fruits comprising chopped cashew nuts, almonds, pistachios, and whatever seeds of your wish and roast all the nuts in the medium flame. Doing this makes the nuts crunchy and fulfilling for making the barfi the best! Transfer the nutty mixture to a plate after few minutes of roasting.
  • Again add 1 tablespoon of ghee and add the grounded dates (khajoor) to make it melt and soften. As you find it getting soft in texture turn the flame low and don't cook too much else it will become hard. Only 2 mins it takes to soften.
  • Now add 1/2 tablespoon Elaichi powder and add all the roasted dry fruits plus a small amount of roasted golden brown poppy seeds to the soft khajur mix.
  • Mix all the ingredients very well till it becomes a good surface of the roll. If you wish to add desiccated coconut powder of 1 to 2 tablespoons you can go for it.
  • Turn the stove off and don't cook too much else it will become dry. Transfer it to a plate and let it cool off for 10 minutes. You can even make Ladoos mixed with poppy seeds powder from the mixture!
  • Now the khajur roll is ready for garnishing. On a flat surface put the roasted poppy seeds and few amounts of the nuts mixture and roll it all along very well so that all the nuts cling to the roll finely.
  • Take a foil paper roll and put the khajur dry fruit roll. Now using tight hands, roll the foil paper through the dry fruit roll and then keep it in the refrigerator for 2 to 3 hours.
                                 
  • Take a sharp knife and make pieces of the dessert. You will come across a beautiful Indian dessert Khajoor ki mithai.
  • Get the plating ready and decorate the plate with the beautiful Khajur roll! A treat to all sugar restricted people.

Recipe notes

  • Make sure you grind the dates by taking breaks while grinding.
  • You can even cut finely the dates and cook directly in the pan if you are doubtful about grinding. 
  • Always use ghee before roasting poppy seeds and the nuts else it will burn.
