Preparation of the Coconut fudge/ Nariyal Barfi

  • For clearing all the pre-existing moisture from the coconut,  heat the wok in medium flame and place all the grated coconut mixture, and keep stirring. This should be done for only 2 to 3 minutes to avoid any further burnouts!
  • Turn the flame to low and add 1 and a half cup of milk and 1 tablespoon of ghee.
  • We had taken milk powder- mix the milk powder in 1/2 cup of milk and pour this into the mixture.

  • Keep on stirring the mix till every ingredient dissolves completely well.
  • Now, add 1/2 cup of powdered sugar and mix entirely well till the mixture leaves behind enough water around the wok.
  • Add the Elaichi powder and stir well. Remember, you should never skip stirring the mixture!
  • Now, grease a glass tray with the desi ghee else you can use butter paper or the regular foil paper as an alternate or if available. This method of ghee greasing is the best one, I recommend!
  • If you want to add dry fruits such as Kaju, badam, etc, you can add them to the coconut mixture.
  • Now in high flame, stir the mix for few minutes.
  • Transfer half the quantity of the coconut fudge mixture into the greased plate closely together enough to make it look like a thick cake base! Evenly press it so it sets well and intact.
  • Come back to the rest half of the coconut fudge in the wok to be used as a top coating to the final outcome of Nariyal Barfi.
  • Mix yellow food color in 1 to 3 tablespoons of milk and pour the color syrup over the fudge. You can even add RoohAfza or any food color of your choice but remember it must be in relation to yellow or orange!
  • Add a few drops of rose water to give a nice flavor.
  • Now, spread the yellow fudge coconut mixture 'evenly' over the thick white coconut fudge base which we made earlier!
  • In case you are left with small areas to fill, you can substitute the top layer with Pista, Kaju, almonds all being cut in small pieces, and press them mildly so they stay intact. You will see a beautiful coconut cake fudge right in front of you!
  • Let it sit at the normal room temperature for 30 minutes.
  • After all, place the fudge tray in the fridge for 6 to 8 hours to make it set like a cake fudge!
  • Finally, cut the coconut barfi into your desired shape be it diamond, rectangle, square, etc.
  • You can topcoat the Nariyal Barfi with grated coconut powder.
  • You are ready with the delicious, cute coconut barfi all in front of you! It would be best if you serve it after refrigeration to enjoy its rich taste!
