Mughlai Style Tasty Chicken Changezi Recipe !

Mughlai Curry Changezi Chicken 

Let me take you back to the 13th century! Guess Why?  This was the era where the delicious chicken recipes came into existence. Not only as an existence but they came out with the use of rich ingredients.
Well, we are talking about the Mughlai flavored Changezi Chicken.

    This interesting chicken recipe is known to be named after the powerful Mongolian ruler of the 13th century, who is Genghis Khan. It is also fondly known as Mughlai Curry by Indians.
    Mughlai recipes are prominently seen around the Mughalai streets of India, for example- Daryaganj in Delhi. 

    The cooking style is inspired by the use of many Indian kitchen ingredients which result in delicious recipes naturally.  Tomato-based gravy is all that you need to experience in this delicious recipe.

    The specialty of this curry is all about the rich wholesome Indian spices, creamy consistency of curd and nuts, and whatnot! Although requires marination for creamy produce.

    Ingredients for chicken changezi


    For Chicken Marination


    1 Kg freshly cleaned chicken

    5 to 6 tablespoons of curd

    1 tablespoon of ginger-garlic paste

    1 tablespoon of black pepper powder 

    1 tablespoon of Deggi Mirch Powder

    1 tablespoon of Turmeric ( Haldi Powder)

    Pinch of whole lemon juice ( for tangy taste)

    For Kaju Onion Paste


    2 tablespoons of ghee

    1 bowl of fresh, thin chopped onions

    20 to 25 pieces of cashew nuts

    For Changezi Gravy


    Butter

    1- 1/2 tablespoon of ginger garlic paste

    Tomato puree ( juice made by 4 ripe tomatoes to give flavor and color)

    Jeera powder, garam masala, chaat masala, Kashmiri chili powder

    Table salt ( as per consistency)

    Dhania Powder

    4 tablespoons milk cream

    Ghee 2 to 3 tablespoons

    Kaju onion paste

    Kasturi Methi Powder

    Green Chillies for Garnishing


    POINTS TO REMEMBER 


    1)   Marinate the chicken for about 2 hours in the refrigerator beforehand for the smooth and time-saving cooking process. The entire dish set must be perfectly ready to avoid any spoilage.

    2) Buy all the kitchen spices handy and cook as per adjusting the high flames and medium flames as per consistency. 

    3)  Check the tenderness of the chicken before mixing all the spices. Ensure that it is properly cooked and continue to stir until perfectly cooked. 


    PROCEDURE 


    • Marinate the fresh clean chicken with the yogurt/curd by adding ginger garlic paste, black pepper, Deggi Mirch powder, Haldi powder. Lastly, add lemon juice for a tangy taste. Remember, not to add salt in the marinade chicken as the latter will be used in further processes.  Keep the marinade in the fridge for 2 hours.
    • For making Kaju and Onion paste, in a pan of 2 tablespoons of ghee add thinly chopped onions and cook in high flame or medium flame till it turns golden brown. Lastly, add 20 pieces of Kaju and roast it till the entire mixture is properly roasted. Remember to add cashew nuts only at last. Grind the mix and keep it aside.
    • In a new pan, add butter and cook until it melts giving a good aroma, and further put ginger garlic paste, saute' it till it turns brown.
    • After all, add the tomatoes puree. The reason we add this is to bring flavor and color to the gravy. Add all the kitchen spices, jeera powder, garam masala, chaat masala, Kashmiri chili powder in 1 tablespoon quantity.
    • Now add salt as per the consistency you witness and dhania powder for flavor.
    • Now add the Kaju paste which we made earlier and cook in high flame till the entire consistency mixture appears thick.

    • The interesting and exciting part is now where we will add milk cream and mix well in high flame. Cover the pan with a lid and let it cook for the next 10 minutes. Remember to change the flame as needed. This is our Changezi gravy masala!
    • In a pan of ghee add the chicken flesh pieces and cook in the high flame by mixing thoroughly. Put the lid and allow to cook for 20 to 25 minutes until no water content is left behind. Ensure that the chicken is cooked 80 percent and appears tender before moving to further steps.
    • Keep the pan in medium flame and slowly add the chicken to the Changezi masala gravy mixture. For the final touch, add salt and 1 tablespoon of Kasturi methi powder and cook for the next 10 minutes. You will see that everything is perfectly cooked with all chicken pieces and gravy.

    • As soon as bubbles appear and are perfectly cooked, garnish with green chilies on top.
