  • The halwa remains in good condition for a long time if stored in the refrigerator for 7 to 10 days in a good airtight container or a steel container!

Suggestions for making the best Moong Dal Halwa

  • Constant stirring is very important in making Moong Dal ka Halwa a grand success. If you skip this it can stick at the pan bottom and who all want this extra work instead of enjoying the recipe. So, prevention is always better than cure.
  • While making the Halwa, keep the flame low to medium always. The high flame must be used only for roasting the nuts.
  • Involve lots of ghee in the preparation to make it very delicious!
  • If you are health-conscious and so is your family, add jaggery in place of sugar for perfect color and taste! It may sound cliched but it is worth it!
  • Using homemade Khoya/Mawa and milk is very important and gives you a rich flavor and texture of the halwa
  • Garnish the halwa in this auspicious Rakshabandhan with saffron, dry fruits, etc.

Ingredients for Moong Dal Halwa

  • 1 bowl of washed Yellow lentils/ Moong Dal
  • 1 bowl Sugar as per the quantity of the moong dal
  • 3/4 glass of milk with Kesar soaked
  • 3 to 4 tablespoons of ground Elaichi/ Elaichi powder
  • Dryfruits such as cashew nuts, Badaam/Almonds, Pista seeds, etc
  • 1 bowl of ghee
  • 3/4 cup of Khoya or homemade malai or cream

Method of Preparation

For preparing the moong dal

  • Sieve the moong dal well because here we didn't soak the dal in water and cleaned it! Sieve it well dry and disperse the neat moong dal and coarse blend the dal in the blender.
  • Don't blend the dal too much so it leaves behind very little! Blend it coarse for the delightful recipe.

For preparing the dry fruits mixture

  • The very first step in making any halwa is to roast the dry fruits in a small amount of ghee and keep it aside beforehand.
  • Remember until it makes a crackling sound, remove them entirely, and cut the nuts once it gets cooled off. No one wants the entire pieces of nuts to be garnished. It is best to make small pieces of almonds and cashews!

For preparing the Moong Dal Halwa

  • After roasting the dry fruits for a few minutes, in the same Wok add 2 big tablespoons of ghee and let it melt.
  • Add the grounded moong dal and cook by constant stirring in low or medium flame until it gives a little brown color.
  • Keep stirring the moong dal in low flame until you see the ghee is led and behind and gives you a perfect soothing fragrance.
  • Now add 2 small bowl cups of water as double the moong dal quantity into the wok and keep stirring again.
  • Add the Kesar soaked milk to the dal and keep cooking. It will appear white at first due to the presence of milk but later give you a changed brown color.
  • Now you will see the consistency appearing dry in nature leaving behind all the ghee around the wok. 
  • Add 1 bowl of sugar which we had taken as per the moong dal quantity and keep stirring till the sugar melts and the mixture again appears to be dry.
  • Now add the most important step, khoya or fresh homemade cream(malai), and stir all again.
  • Cover the lid of the wok and turn the gas off which will leave across all the ghee.
  • After a good 5 minutes, open the lid to see the dry consistency of the halwa in a way it has absorbed all the necessary ingredients.
  • Add the Cardamom powder/ Elaichi powder & the roasted dry fruits!
  • Now turn the stove on and cook by stirring again for 5 minutes. Add 2 small tablespoons of ghee here.
  • You will experience the perfect Halwa color with a good aroma as same as that of an Halwai!
  • Once the ghee is absorbed, garnish with Kesar and few toppings of dry fruits.
  • Serve the delicious drool-worthy Moong Dal Halwa for a delightful Rakshabandhan festive treat.
